Maruya is the first traditional Edomae sushi restaurant to set foot in the San Francisco's Mission District Maruya offers a dining experience, inviting customers to venture and try Maruya Omakase (Chef's Choice) to understand sushi dining as it is prepared and served in Japan. Maruya's a la carte menu offers an extensive list of fish. This fine dining menu is accompanied by a modern yet subtle interior with a handcrafted cyprus sushi bar and black walnut tables. Shinichi "Sam" Kawaguchi, Executive Chef Chef Kawaguchi was born in Asakusa, right in the heart of Tokyo, Japan. He began his sushi chef career in his early 20s in shitamachi, the old downtown, where Edomae sushi was introduced. For the next ten years, he honed his skills in Tokyo. Prior to his arrival in the United States, Chef Kawaguchi was a sushi chef at the famous Imperial Palace Hotel, Tokyo. His skill is steeped in tradition when it comes to preparing and presenting sushi. He prepares and presents the fish as he learned it more than 40 years ago. He adheres to a strict standard of how a particular fish should be prepared in order to bring forth its specific flavor and character. Although Chef Kawaguchi possess a high skill level, his demeanor is modest and his personality is energetic. One would characterize his sushi presentation as both traditional and simple; the word "fusion" does not exist in his sushi repertoire. Chef Kawaguchi is proud to offer Edomae in the San Francisco Mission District.
